Research center for oroducts of animal origin deals with basic, applied and developmental research in the food chain of animal origin. The center conducts scientific research related to the following scientific disciplines: meat technology, milk and dairy products technology, technology of functional products of animal origin, quality and safety of raw materials and products of animal origin, physico-chemical and biochemical properties of products, quality standardization and safety of traditional products of animal origin, protection of geographical origin, technology of by-products of animal origin, etc.
The research conducted within the Center, with its scope and quality, provides an appropriate contribution to the improvement of scientific disciplines related to raw materials and products of animal origin, as well as the development of new technologies, products and procedures within the industrial production of food of animal origin. In that sense, the Center for Products of Animal Origin has a successful cooperation with producers and relevant scientific and development institutions in the country and abroad, with the aim of developing new and improving existing technologies and processes, and applying scientific achievements in practice.
Our researchers collaborate with colleagues from industry, scientific and educational institutions, as well as with other influential stakeholders when it comes to food production, in a way that provides constant discussion of strategies related to research and development, technical issues, quality management (ISO, HACCP, GMP, etc.), current and future regulations, etc.
In addition to the above, the Center deals with the development and implementation of HACCP system, development of product sustainability studies, development of conceptual solutions and major technological projects, organization of seminars and conferences, development of scientific and professional studies and publications, expert consultations, training of business staff and others.
To perform experiments in these areas, the Center for Animal Products has a Pilot Plant for meat technology.
