CoCOI FoodTech: Co-Creation of Open Innovation in Food Technology, projekat Naučnog instituta za prehrambene tehnologije u Novom Sadu (FINS), podržan kroz prvi REINFORCING otvoreni poziv se uspešno privodi kraju. Projekat je doneo nov pristup naučnom istraživanju, promovišući otvorenu nauku, odgovorno i inkluzivno društveno istraživanje i otvorene inovacije (engl: Open and Responsible Research and Innovation; ORRI), jačajući saradnju između naučnika, privrede i građana. Glavni ciljevi CoCOI FoodTech projekta:
- Sagledavanje otvorenih inovacija u prehrambenom sektoru kako bi se razvio pristup za uspešnu komercijalizaciju inovacij u prehrambenoj tehnologiji, koji bi ujedno odgovorio na zahteve savremenih potrošača, primenjujući inovativnu metodologiju koja uključuje sve relevantne zainteresovane strane.
- Osnaživanje istraživača kroz edukaciju zaposlenih na FINS-a za uspešnu organizaciju i facilitaciju ko-kreativnih aktivnosti zajedno sa građanima, kao i analizu i konceptualizaciju dobijenih rezultata, izvan tradicionalnih naučnih pristupa.
- Razvoj misaonog alata FoodInnovate Canvas, jedinstvenog alata koji podstiče saradnju, kreativnost i inkluzivne inovacije, vodeći korisnike korak po korak od samog početka do kraja procesa razvoja prehrambenih proizvoda koji su u skladu sa najsavremenijim zahtevima tržišta.
Ključne aktivnosti u okviru CoCOI FoodTech projekta:
- Definisanje otvorenih inovacija:
- Plan otvorenih inovacija FINS-a.
- Dokument za građane i širu javnost za upoznavanje sa pristupom otvorenih inovacija.
- Edukacija i otvorene inovacije:
Organizovane su četiri radionice za istraživače sa FINS-a i građane sa ciljem razvoja ideja za inovativne prehrambene proizvode:
- Radionica 1: Od poljoprivrednog otpada do inovativnih prehrambenih proizvoda.

- Radionica 2: Od industrijskog otpada do ukusnih prehrambenih proizvoda.

- Radionica 3: Lego u nauci? Kako nauka može biti zabavna?

- Radionica 4: Učenje uz praktične aktivnosti.

Kroz ove radionice, naučnici FINS-a su osnaženi da samostalno organizuju i primenjuju concept ko-kreacije u budućim aktivnostima, zajedno sa građanima, predstavnicima industrije i drugim relevantnim zainteresovanim stranama.
- Razvoj FoodInnovate Canvas 12-modularnog misaonog alata za rešavanje problema i podsticanje ko-kreativnih inovacija u prehrambenoj industriji. Alat će biti dostupan istraživačima, privredi i društvu, kao i FINS-u, kao osnova za sve buduće aktivnosti i projekte, uz prilagođavanje specifičnim potrebama i zahtevima svakog pojedinačnog istraživačkog zadatka.
Rezultati CoCOI FoodTech projekta
Projekat će:
- Povećati vidljivost naučnih rezultata FINS-a implementacijom inovativnog metodološkog pristupa.
- Podstaći učešće građana i drugih aktera u istraživačkom procesu, a time promeniti I njihov konvencionalni stav/doživljaj distanciranti naučnika u odnosu na njih.
- Jačati poverenje javnosti u nauku i doprineti rešavanju društvenih izazova kroz odgovorne inovacije.

Prezentovanje rezultata
- REINFORCING Forum o otvorenom i odgovornom istraživanju i inovacijama: Istraživanje globalnih perspektiva i promovisanje odgovornosti i otvorenosti za oblikovanje budućnosti ORRI-ja, održan 7-8. oktobra 2024. u Beču, Austrija, gde su dr Dragana Ubiparip Samek i dr Renata Kovač predstavile praksu CoCOI FoodTech Path.
- Naučni rezultati projekta predstavljeni su i na FoodTech 2024 kongresu kroz poster prezentaciju: Ubiparip Samek D., Kovač R., Matić M., Đerić Ilić N, Bajić A., Županjac M. & Pestorić M. Co-Creation of Open Innovation in Food Technology
CoCOI FoodTech: Co-Creation of Open Innovation in Food Technology, project of the Institute of Food Technology (FINS) in Novi Sad, supported through the first REINFORCING Open Call is coming to an end. The project introduced a novel approach to scientific research, promoting open science, responsible and inclusive societal research, and open innovation, while strengthening collaboration between scientists, industry, and citizens. CoCOI Food Tech Objectives:
- Exploring Open Innovation in the food sector to develop a pathway for successful commercialization of innovation in food technology and addresses the consumer preferences, applying innovative methodology that involves all relevant stakeholders.
- Empowering Researchers: Educating FINS scientists to efficiently organize and facilitate co-creation activities as well as the subsequent result analysis and conceptualization, moving them beyond conventional research approach.
- Developing the FoodInnovate Canvas: A unique thinking tool that fosters collaboration, creativity, and inclusive innovation and guiding users step-by-step from the very beginning to the end of the process of developing food products that meet modern market demands.

Through these workshops, FINS researchers were empowered to efficiently implement future co-creation activities together with citizens and other relevant stakeholders.
- Development of the FoodInnovate Canvas Thinking Tool
A 12-module thinking tool was developed to encourage problem-solving and inclusive innovations in the food industry. The tool will be available to researchers, industry, and the wider community. It will serve as a foundation for future projects, adaptable to specific needs and challenges.
CoCOI FoodTech Outcomes
The project aims to:
- Increase the visibility of FINS’s scientific results by implementing an innovative methodology
- Encourage active participation of citizens and stakeholders in the research process by changing their conventional mindset related to established perception of scientists being distant from citizens.
- Build public trust in science while addressing societal challenges through responsible innovations.

- The REINFORCING Open and Responsible Research and Innovation Forum: Exploring Global Perspectives and Mainstreaming Responsibility and Openness to Shape the Future of ORRI, 7-8th October, 2024 in Vienna, Austria where Dr Dragana Ubiparip Samek and Dr Renata Kovač presented CoCOI FoodTech Path practice.
